Busy Girl Approved: The Easiest Vegetables to Grow in Your Garden

Having your own vegetable garden is the absolute dream! However, it can also be a lot of work that requires a lot of time, energy, and patience. And sometimes, those are the resources that we’re short on. But — that doesn’t mean that you can’t grow any vegetables at all! I’ve curated a busy girl-approved list of the easiest vegetables to grow that will not only help you work on your green thumb but also save you plenty of visits to the grocery store!

Cherry Tomatoes

First up on our list of easy-to-grow veggies — we have cherry tomatoes! An absolute must-have, if you ask me. I have to have them in my fridge — they are a great addition to salads and sauces, and even make a delicious snack. And the best part? These little gems practically grow themselves! Cherry tomato plants are resilient, low-maintenance, and prolific producers, making them perfect for beginners or anyone short on time. All you have to do is plant them in a sunny spot, water them, and watch as they flourish and produce sweet, juicy tomatoes all season long.

Zucchini

Next on my list is zucchini – the versatile summer squash that’s as easy to grow as it is delicious. Zucchini plants are known for their rapid growth and abundant harvests, which makes them perfect for busy garden girlies. All you’ll need to do is plant zucchini seeds or seedlings in well-drained soil and give them plenty of sunlight and water. Before you know it, you’ll be harvesting an abundance of tender, flavorful zucchini that’s perfect for grilling, sautéing, baking, and more. And when I say “an abundance”, I really mean it. Zucchini plants are prolific producers, which means you’ll have plenty to share with friends and family.

Leafy Greens

These veggies are quick to grow, require minimal maintenance, and can be harvested multiple times throughout the season. Last but not least, I’ll have to end the list with one of my favorite vegetables of all time — cucumbers. They are refreshing, incredibly versatile, super low in calories, and so easy to grow. Just plant cucumber seeds or seedlings in fertile, well-drained soil, and provide them with plenty of sunlight and water. You don’t even need an actual garden to do that, a few pots on your balcony will do the trick as well. With a little care and attention, your cucumber plants will thrive and produce an abundance of crunchy cucumbers that are perfect for salads, sandwiches, pickling, or snacking. And hey — they even work well as a quick eye mask.
